Mini egg rocky road recipe

Now that we're all spending a lot more time indoors, it seems like the perfect time to do more baking. This is a super simple bake-free recipe to make a delicious mini egg rocky road - it's already got me feeling excited for easter!

Ingredients:

  • 135g butter or margarine
  • 200g digestive biscuits
  • 100g mini marshmallows
  • 100g mini eggs
  • 200g dark chocolate
  • 3 tbsp golden syrup

Method:

  1. Break up 200g of digestive biscuits using either a rolling pin or by hand in a plastic bag
  2. In a microwave-safe bowl add your butter, syrup and chocolate and melt down into a smooth liquid.
  3. Stir in your mini marshmallows and biscuit pieces to the chocolate mixture.
  4. Pour out your mixture into a lined baking tin (at least an inch high) and add your mini eggs on top.
  5. Pop into the fridge for at least 2 hours to set, then slice up and enjoy!
